Topic: Node - Change date to custom title

Where the date is shown in the Node's, is it possible to replace this with a custom title.

http://thehorticulturalchannel.info/     For example, if I enter a post into my blog section then the Node would read 'Blog'.   If it's news the Node reads 'News' etc.   But for long categories, I have one 'The Chicken Diaries' I'd like the Node to just read 'Chickens'. So if you could custom what appeared for each category then I'd love to have this feature.

Does it already exsist or could it be included?

I would like to know this as well except I want to replace my comment counts -- both on the nodes and in the traditional post -- with a specific custom field data.
