Any suggestions, or ways to go around?

It's likely that this function doesn't support HTML tags in the excerpt, so what you're after maybe isn't easily possible.

You could try the advanced excerpt plugin which looks like it *might* help you out.

when adding a post you can choose for: Wysiwyg or html (in the tabs right) choose html an you can add the list smile
